THERE IS A RIGHT TIME

There’s no way you can do it
unless
you’re fast with the spatula.
You slide it under
with a jab or a poke
and get beneath
the white and the yolk.

If you do it too soon
before the white is set
you may have regrets.

There is the right time
to do it.
You may wish to flip it over
or leave it sunny side up.

It’s being sensitive
to what is in the frying pan.
But if you screw up
you can always scramble.
